Easy Autoimmune Paleo Coleslaw –
Since June 10, 2014 I have been doing the autoimmune protocol which makes it 2 months. I made this coleslaw for a July 4th barbeque which was a big family gathering. This coleslaw was put out with all the rest of the food and everyone ate it without noticing that it didn’t have any GMO mayonnaise. I was so happy to have something to eat that did not have nightshades or other prohibited foods. I have been noticing improvement in joint pain and neck tension from following the protocol. I highly recommend that anyone with an autoimmune disease try it for 6-8 weeks. These are two resources I have been using here and here.
Recipe: Easy Autoimmune Paleo Coleslaw (low carb, gluten free, grain free, dairy free)
Ingredients:
1 head shredded cabbage (why choose organic cabbage)
1 cup full fat coconut milk (get it here)
1/4 cup apple cider vinegar (get it here)
2 tablespoons honey (find raw honey here)
fine sea salt and pepper to taste (get good sea salt here)
Directions:
Mix all the ingredients together and chill in the refrigerator for 1 hour. Serve and enjoy.
Note: if you are doing low carb feel free to use 1 tsp stevia powder extract instead of honey
